Vinification

The grapes for this sparkling wine, a robust blend of Merlot and Cabernet Sauvignon, catch the sun on the hills surrounding Lanciano. At an altitude of around 200 meters and with their feet in salty soil, the vines receive exactly what they need to ripen evenly. Harvest takes place in early September, simply by hand, to maintain freshness. In the cellar, the must is first rested for 24 hours at a low temperature to allow the juice to clear. After the primary fermentation in stainless steel, the secondary fermentation follows using the Charmat method. Because the wine then ages for three months on its own lees (lily), it develops that refined sparkle, its fresh structure, and elegant expression.
