Hier komt de verrassing. De smaak is levendig en perfect in balans, maar heeft ook een zachte, licht romige ondertoon. Dat komt omdat hij de tijd heeft gekregen om te rusten op zijn eigen droesem, wat extra body geeft

The secret of this wine lies in the cool tranquility of the cellar. After an exceptionally gentle pressing, the juice is immediately protected to preserve its fresh and pure character. The must is then left to rest on the skins for about twelve hours, giving the wine extra structure and finesse. Fermentation takes place very gently at a low temperature (13°C) to preserve the vibrant expression of the Cococciola grape. The wine is then aged for two months on its own fine lees in stainless steel tanks. This creates that extra depth and a beautifully rounded, almost creamy mouthfeel.
