Vinification

In the cellar, the winemaker strives for purity and speed. The grapes are pressed directly, without the skins remaining in the must; this gives the wine its light color and crystal-clear character. Fermentation occurs completely spontaneously—a "free" fermentation—in resin vats, without the intervention of thermostats. After several careful rackings and a period of rest in stainless steel, the wine is bottled in the summer. Just in time to catch the sun in your glass.
