This wine is pure nature and free from modern tricks. Fermentation occurs spontaneously in large glass bottles—the traditional "damigianas"—without temperature control. The winemaker intervenes as little as possible and allows the wine to develop entirely on its own. There is no filtering and no corrections. As a result, you may find some sediment at the bottom of the bottle. This is not a flaw, but rather the proof of a living, honest wine that has been allowed to preserve its natural expression.
